    Chicken Sandwich

    Other day when I was chatting with my friend, she asked my ideas for an easy chicken starter and I suggested this. She said she will get it from my blog and I said ok. The next day she mailed me saying she couldn’t find the recipe and I was a bit surprised..I thought may be she gave the wrong search or something, so I (supposedly the master of the site) decided to do the magic search, but no luck…I was wondering whether it got deleted accidentally, because I was so sure that I had posted this one since its one of my fav ones, but I was wrong :( and somehow I missed posting this one, though I make it frequently.

    Anyways, so the first thing I did the next day of discovering the missing post was to make this and take photos :) I’ve got the recipe from my friend Jisha almost 2 years back and its still successfully running in my home theatre :)

    As I’ve already said this is a very simple one… Here is the recipe:

    1. Cooked boneless chicken – 1cup, cooked with salt & 1/2 tsp crushed pepper
      Onion – 1
      Green chili -2,3
    2. Mayonnaise – 2,3 tbsp
    3. Salt
    4. Bread – 4-6 slices
    5. Tabasco sauce – 2 tsp (optional)

    Mince together the cooked chicken, onion and green chili in a food processor or blender. Add mayonnaise and salt to this and mix well. Make it in a paste form. Remove the crusts from the bread slices. Apply the chicken mix to one bread piece and sandwich with other one. If you are serving this as a starter, cut each bread slice into four pieces and put some chicken mix on the small bread square and garnish it with a drop of tabasco sauce or any other sauce of your choice.

    Notes: You can prepare the filling one day in advance and keep in the fridge. Also if you are counting the calories, substitute full fat mayonnaise with low fat version or egg free mayonnaise. If you want to serve it for small kids, you can substitute green chili with pepper powder.

      I love chicken sandwitches like this.
      I do the same way, just sometimes i add finley cut spring onions, or jerking to it.

      I too lov this sandwich and make it often..i add grated carrots and celery and instead or tabasco i add dijon mustard sauce at times. This spread also tastes Abs delish in a toasted pita / kubbuz.

        I usually use store bought mayonnaise, so I dont know how to make it at home.

        Am sure you can find homemade mayonnaise recipes on other food blogs :)

      I have a question…it may sound silly but is the onion also put while cooking the chicken? or a raw onion has to be blended with it? Sorry i couldn’t find any clarification about this in the recipe!

        Onion is not cooked. Its raw onion blended with cooked chicken.

      Hi Maria,
      I greatly enjoy reading/trying out your recipes.
      I make a similar chicken starter for my parties, but I tend to grill the little bread-and-mixture squares and serve them crisp.
      I sometimes add a small amount of dried celery seeds to the mix (optional), and it gives it a nice flavor.
      Spring onions (as another reader has mentioned) diced finely work well.
      If you’re planning to grill them, grated cheese on top is also a great idea!
