I do hope you had a fun filled festive celebration with loads of sweets &amp; yummy food. Our diwali is usually very much limited to feasting on the yummy diwali sweets given by friends. This time though, I got a big box of sweets from India&#8230;. my brother was here :) Now you know the reason for the small break.</p>
<p>Btw, tell me&#8230; what do you google the most? I&#8217;m just curious. If you ask me, recipes top my search list. When I&#8217;m absolutely jobless, I check the stats page of this blog and sometimes I find interesting search words there. Well, most of the search key words are for recipes but sometimes there are exceptions! The other day I just happened to see this one&#8230; &#8220;how to confront Mallus (Malayalees/Keralites)&#8221;. If you are thinking how that search lead up to this space, here is the <a href="http://www.mariasmenu.com/updates/response-to-mallu">answer</a>. Anyways, after seeing that the very first question popped up in my head was &#8230; are we that difficult a bunch that you need to do a google research on confronting us, what do you think?</p>
<p>I know I know..I&#8217;ve been blabbering so much and didnt tell you anything about the recipe. Well.. I happened to have some <a href="http://www.bettycrocker.com/products/bisquick/default">Bisquick</a> (pancake mix) with me which was nearing its expiration date, so did a quick google search and I ended up with this. This is a very easy appetizer/snack recipe. It takes no time at all to put this together. I actually thought it tasted more like a savoury cookie with sausages in it! If you like sausages, its a good reason to try this, if you like cheese then its another plus and if you like baked snacks than fried ones, then what are you waiting for, start making this already. I should tell you something though&#8230; it looks a bit dry, but once you take a bite, you&#8217;ll know looks can deceive you ;)</p>

<li class="ingredient">Grated cheese &#8211; 3/4 cup (I used cheddar)</li>
<li class="ingredient">Milk &#8211; 2 tbsp (I used cold milk)</li>
<li class="ingredient">Hot sauce &#8211; 1/2 tsp</li>
<li class="ingredient">Cajun seasoning &#8211; 1/2 tsp (optional)</li>
<li class="ingredient">Dried rosemary &#8211; a pinch</li>
<li class="ERSeparator">Substitute for Bisquick: Recipe from here</li>
<li class="ingredient">1 cup flour</li>
<li class="ingredient">1 1/2 teaspoons baking powder</li>
<li class="ingredient">1/4 teaspoon salt</li>
<li class="ingredient">1 tablespoon Crisco (shortening) (you can use butter also)</li>

<li class="instruction">Preheat oven to 180C/ 10 mins before baking. Line a baking sheet with parchment/baking paper. Stir together all ingredients, using hands or spoon. Shape mixture into 1-inch balls. Place in pan. Bake in the preheated oven for 20-25 minutes or until brown. Immediately remove from pan. Serve warm with sauce for dipping.</li>

<li class="instruction">Mix dry ingredients together, then using a pastry knife cut the Crisco into the mix. Makes 1 cup Bisquick equivalent. This mix has to be stored in the fridge.</li>

<p>I got around 12 small &#8211; medium size balls with the above qty. Mine was ready in 20 mins, so adjust the baking time to suit your oven. It&#8217;s better not to over brown it otherwise it becomes dry. You can use any cheese of your preference. Also you can increase the qty of cheese, if you like it. Its better to serve it hot/warm. It becomes hard once its cooled. Please check out this page to see how you can make this ahead &amp;amp; freeze it.</p>

But then with the celebration of  Team India winning the Cricket World Cup happening all around the place, how can I just post a chammanthi recipe? So here&#8217;s a spicy beef fry recipe, to balance out all the sweet celebrations :)</p>
<p>I know you must be wondering why I&#8217;m posting a beef fry recipe again. I&#8217;ve already posted two <a href="http://www.mariasmenu.com/spicy/beef-fry-a-me-me-tag">beef fry</a>/<a href="http://www.mariasmenu.com/beef/beef-olathiyathu">olathiyathu </a>recipe. I dont want to sound like a marketing person saying this product is way different from the usual ones you have seen ;). But let me tell you, there is a DIFFERENCE, try for yourself &amp; you&#8217;ll know what I&#8217;m talking about.</p>
<p>Also about the phrase &#8220;kallu shappu style&#8221; &#8230;.I&#8217;ve never been to a kallu shappu (toddy shop) or even the famous karimbinkala shappu family restaurant. Though kallu shappu is an unfamiliar territory to me, I&#8217;ve my connections to get the shappu recipe ;)</p>
<p>Do you remember <a href="http://www.mariasmenu.com/spicy/prawns-olathiyathu">Sarasa chechy, my amma&#8217;s assistant</a>? I got this recipe from her. Her husband is a cook in a kallu shappu. Though Sarasa chechy refuses to admit that her husband has any influence on her cooking style, I believe this beef fry has shappu style written all over it. So those of you who have &#8220;shappu&#8221; experience please do try this and share your feedback. Hey,that doesn&#8217;t mean others cant try this&#8230;</p>

<li class="ingredient">Small onion &#8211; 1 cup, crushed</li>
<li class="ingredient">Ginger &amp; garlic- 1 1/2 tbsp, crushed</li>
<li class="ingredient">Crushed red chilli &#8211; 1 &#8211; 1 1/2 tbsp</li>
<li class="ingredient">Coriander powder &#8211; 1 1/2 &#8211; 2 tsp</li>
<li class="ingredient">Turmeric powder &#8211; 1/4 tsp</li>
<li class="ingredient">Pepper powder &#8211; 1 tsp</li>
<li class="ingredient">Garam Masala &#8211; 1- 1 1/2 tsp</li>
<li class="ingredient">Thengakothu (bite size coconut pieces) &#8211; 3/4- 1 cup</li>
<li class="ingredient">Vinegar &#8211; 2 tsp</li>
<li class="ingredient">Salt</li>
<li class="ERSeparator">For tempering</li>
<li class="ingredient">Coconut oil</li>
<li class="ingredient">Curry leaves</li>

<li class="instruction">Marinate the cleaned beef pieces with the ingredients listed under marination (number 2 ingredients). Keep it aside for 15-20 mins. Add 2 tbsp of water to this &amp; pressure cook till the beef is done(the cooking time of beef depends on the type of beef used). Keep the cooker closed for 20-25  mins. Open the cooker &amp; if there is any excess water in the beef, cook till the water is dried completely.</li>
<li class="instruction">Heat oil in a heavy bottom pan &amp; add tons of curry leaves. Fry it for few seconds. Add the cooked beef. Give it a good stir. Cook on low flame till the beef becomes black in colour. If the beef appears to dry in between, add a little oil &amp; continue cooking. It will take around  10-15 mins. Dont forget to give a stir in between. That&#8217;s all &#8230;the shappu beef fry is ready!</li>

<p>I saw Sarasa chechy using coconut oil very generously &amp; I believe that&#8217;s the secret behind this lovely dark colour. So let loose your grip on the oil bottle for just once &amp; enjoy this spicy treat ;) Also please try to use crushed red chilli itself, instead of chilli powder. It gives a very different flavor to this dish. Try to use small onions (shallots)&amp; please dont substitute it with onions, it will affect the taste. Dont forget to use coconut oil for this recipe, it&#8217;s a must!</p>

</p><p>How was your Onam celebrations? Hope you had a great time with your friends &amp; family. We celebrated Onam at our friend Vinod &amp; Deepthi&#8217;s  place. I know I didnt wish you Onam. I didnt make anything special for Onam &amp; I felt bad wishing you Onam empty handed. However if you are a Non Resident Malayalee who is waiting to celebrate Onam during the weekend, please have a look at my <a href="http://www.mariasmenu.com/recipes/onam-special">Onam recipes</a>, hope you will like something. If you have already celebrated Onam and want to taste some non veg stuff, here is a quick option.</p>
<p>I&#8217;ve posted only one sausage recipe before, <a href="http://www.mariasmenu.com/spicy/sausage-packets">sausage packets</a>. I got that recipe from one of our friend&#8217;s when she served it as a starter for a party. This recipe is also from another friend, my dearest friend, Maryann. This recipe is a breeze to make &amp; a total crowd pleaser.</p>

<p>Here is the recipe:</p>
<ol>
<li>Sausage &#8211; 5</li>
<li>Ginger &amp; garlic &#8211; 1 tsp, each grated</li>
<li>Onion &#8211; 1 medium, finely chopped</li>
<li>Pepper powder &#8211; 1/4 &#8211; 1/2 tsp</li>
<li>Tomato sauce &#8211; 1 tbsp<br />
Soya sauce &#8211; 1/2 -1 tbsp<br />
Hot sauce/Tabasco sauce &#8211; 1 tsp (refer notes)</li>
</ol>
<p>Boil the sausage &amp; cut into bite size pieces. Heat oil in a pan &amp; add finely chopped onion. When it becomes brown add grated ginger &amp; garlic. Fry for 2 minutes &amp; add pepper powder. Mix well &amp; add all the sauces. Combine well &amp; add the cooked sausages. Mix well &amp; keep cooking on low flame for 5-7 minutes. Give it a stir in between &amp; remove from fire when it is roasted well. You can serve this as a starter/appetizer or as a side dish for fried rice.</p>
<p><strong>Notes: </strong>If you want to make this as a side dish, you can add capsicum, celery etc along with onion &amp; follow the same recipe. I didnt add any salt since the sausage &amp; soya sauce has enough salt. However you can add it as per your requirements. You can also use the small size cocktail sausage for this. You can substitute hot/tabasco sauce with chilli sauce.

I&#8217;m almost about to say yes, but then at that precise moment, my mind dishes out the picture of deep dark <a href="http://www.mariasmenu.com/spicy/beef-fry-a-me-me-tag">beef fry</a> topped with thengakothu (coconut bites), followed by <a href="http://www.mariasmenu.com/spicy/konchu-roast-prawn-roast">chemmeen roast</a> (prawns roast) and <a href="http://www.mariasmenu.com/spicy/kerala-fish-fry-meen-varuthathu">meen varuthathu</a> (fish fry) and that list goes on. HHmmm, its not worth being a veggie, <a href="http://www.mariasmenu.com/spicy/beef-fry-a-me-me-tag">beef fry</a> is worth more than that ;).</p>
<p>I guess its been more than a year that I posted a beef recipe here. It&#8217;s mainly because I&#8217;m trying to reduce the quantity of red meat and even if we buy it occasionally, I automatically make <a href="http://www.mariasmenu.com/spicy/beef-fry-a-me-me-tag">beef fry</a> even without considering any other options. So this time when I bought it, I wanted to try something new and ended up with this. Again, this recipe is from my mother in law. It&#8217;s a two in one dish, you get veg &amp; non veg all at once. That sounds nice, eh :)?</p>
<p>The recipe can be put in the everyday cooking category. It tastes great with rice or chappathi or even <a href="http://www.mariasmenu.com/favourites/palappam">appam</a>. Btw, did I tell you that I&#8217;m planning to put together some recipes for everyday cooking. When I put together the recipes together, there has to be many pages, so I guess it can be called a cookery book ;) Any suggestions/ ideas?? Yeah, I want to make a complete menu (breakfast, lunch, tea time snack &amp; dinner) of simple everyday recipes for each day for one month. If you ask me, the biggest challenge in cooking is, to make everyday stuff interesting and healthy. That&#8217;s how the whole idea started. Anyways, its still in the planning stage. Let&#8217;s see how it goes.</p>
<p>For the time being, we will move on to the recipe, ok?</p>
<p>Here is the recipe:</p>
<ol>
<li>Beef &#8211; 1/2 kg<br />
<strong> For Marination:</strong></li>
<li>Kashmiri chilly powder &#8211; 1 1/2 tsp<br />
Pepper powder &#8211; 1/2 tsp<br />
Coriander powder &#8211; 2 tsp<br />
Garam masala &#8211; 1/2 tsp<br />
Ginger &amp; garlic &#8211; 1 tbsp, crushed<br />
Vinegar &#8211; 2 tsp (refer notes)<br />
Salt<br />
Curry leaves</li>
<li>Kaya (raw banana) &#8211; 2 medium &#8211; big</li>
<li>Small onion (kinjulli) &#8211; 1/2 &#8211; 3/4 cup, sliced finely<br />
Ginger &amp; garlic &#8211; 1 tbsp, crushed</li>
<li>Kashmiri chilly powder &#8211; 1 1/2 tsp<br />
Coriander powder &#8211; 2 tsp<br />
Garam Masala &#8211; 1/2 tsp<br />
Meat Masala &#8211; 1/2 tsp (optional)</li>
<li>Water &#8211; 3/4 cup<br />
Mustard seeds &#8211; 1/4 tsp<br />
Curry leaves<br />
Coconut oil</li>
</ol>
<p>Clean the beef and cut into bite size pieces. Marinate it with the ingredients listed under marination. Keep aside for 10 mins or so. Add 3/4 cup water to the marinated beef and cook till its done. Drain the cooked pieces and keep aside the stock. Cut the raw banana in cubes and cook it with salt &amp; water, till its done. Drain the water and keep aside the cooked raw banana.</p>
<p>Heat oil in a pan &amp; splutter the mustard seeds. Add finely sliced small onion, crushed ginger &amp; garlic &amp; curry leaves. Cook for a few minutes. Add the masala powders and fry till the oil starts appearing, a minute or two. Add the cooked beef &amp; banana to this. Mix well. Add the stock of the beef and again mix well. Do a salt test, and add more if necessary. Cover &amp; cook till the beef pieces &amp; banana cubes are coated well with the gravy. Remove from fire.</p>
<p><strong>Notes:</strong> Vinegar acts as a meat tenderizer and you can omit it if you wish. The curry tastes better the next day or keep at least a few hours before serving. If the curry tends to dry, add a little bit of water while heating it.

</p><p>Before anything else, let me tell you something. I showed this picture to 2 people and they both said they didnt like the thread in the picture. Come to think of it, even I didnt like it much. But I felt so lazy to take photos again and may be in my defense I can say I dont quite like the idea of a satin ribbon around spring rolls. Satin ribbon looks pretty around cakes, right? Anyways, hope you are ok with it. So now shall we move on?</p>
<p><strong>Update: </strong>I got mixed reaction through comments &amp; mails about the thread that is wrapped over the spring rolls. Some of you liked it and some of you didnt. However one of my reader&#8217;s <strong><a href="http://nishyacreations.blogspot.com/">Nishya</a></strong>, sent me an email other day. She wrote <em><strong>&#8220;Since you wrote in the blog that u were lazy to take another snap, I  changed it using photoshop&#8230; Hope you liked it&#8230;&#8221;.</strong></em> Thank you so much dear, for taking time to do this for me, appreciate it a lot :). <p>Sometime back we gave a surprise visit to an uncle &amp; aunty. Since we met them after a long time, they insisted that we should join them for lunch. What intended to be a surprise for them turned out to be a surprise for us when we saw the lavish spread for lunch at such a  short notice. Personally I was kinda feeling bad about myself because it would take me at least 1 whole day to cook such a spread. So while I was helping her to set the table I casually asked her how she managed such a spread without any notice. Now her answer kind of surprised or should I say &#8216;shocked&#8217; me. She said all non veg items were cooked almost a year ago and frozen. I was dumbstruck! Yeah I know people do freeze things, even I do that, but still freezing a curry for a year!!! But later I discovered my shock was nothing compared to Jose&#8217;s.</p>
<p>After hearing about the freezer story, I suddenly had a new found respect for vegetables and decided to be a veggie for the day and somehow I wanted to tell Jose too. But I didnt get a chance. During lunch, as usual Jose focused only on the non veg stuff and he particularly liked the prawns. So he was asking aunty to teach me how to make that prawns curry. That time she happened to mention the freezing part to Jose while serving him a huge portion of prawns. I really wish I had a camera with me to capture the &#8220;horror&#8221; look on Jose&#8217;s face at that time ;).</p>
<p>Ok, please dont get me wrong. I&#8217;m not against freezing food stuff. But somehow freezing a curry for more than a year is a bit scary for me. I do freeze stuff like cutlets and raw meat and all, but I do it only for a month or so. Recently I happened to see a forum where somebody  asked whether it is safe to use blueberries which they had frozen 4 or 5 years ago!! After I read that, the first thing I did was to run to my fridge and do a quick spring cleaning. I guess Nowadays we tend to dump so many stuff in the fridge and completely forget about it (just like stuffing the wardrobe with new clothes ;) ). Basically I&#8217;m kind of person who doesnt like the fridge to be crowded at all. Unless I have some guests coming, I usually keep it less crowded. What about you? Do you freeze a lot of stuff and for how long?</p>
<p>Now if you are wondering whats the connection between frozen food &amp; the spring rolls? Yeah, there is a small connection, you can freeze it ;). Now, please dont give me that look. I&#8217;m just suggesting you know&#8230; I have seen many kids enjoying nuggets so much. I think this sure comes handy if they get bored of nuggets or if you want to replace it with some homemade stuff.. I got this recipe from <a href="http://shabscuisine.blogspot.com/">Shab&#8217;s</a> place. I&#8217;ve bookmarked many recipes from her place and wanted to make <a href="http://shabscuisine.blogspot.com/2009/08/spring-roll-and-tag.html">this</a> for a long time. I finally made it sometime back and we loved it. Thanks Shabs for such a wonderful recipe. I like the way she writes her recipes, she explains it very well and to the detail, you cant go wrong with it. I used chicken for the filling but you can use beef also. I&#8217;ve used the same filling for my <a href="http://www.mariasmenu.com/chicken/stuffed-bun">stuffed buns</a> too.</p>
<p>Here is the recipe. I followed the recipe almost exactly with some minor variations. Below  is the recipe as given in her place, I will give my variations in the  notes.</p>

<p><strong>For Pancake</strong></p>
<ol>
<li>1 cup Plain Flour (150gms)<br />
1 1/4 cup water<br />
1 medium size egg<br />
Salt  to taste</li>
</ol>
<p><strong>For the filling</strong></p>
<p>Meat Masala &#8211; 1 cup</p>
<p><strong>Meat Masala</strong></p>
<ol>
<li>Minced meat &#8211; 900 gm</li>
<li>4 cups (3 1/2 medium sized) Onion, thinly sliced and then chopped<br />
2 ½  &#8221; &#8211; 3&#8243;- Ginger, grated<br />
10 -12  Cloves of garlic, grated<br />
8-10  Crushed Green chilli</li>
<li>½ tsp Turmeric<br />
1 tsp + 1/2 tsp Pepper powder<br />
1/4  + 1/4 tsp garam masala</li>
<li>Salt – as reqd.<br />
3-4 tbs- Oil<br />
1 tsp &#8211;  Lime juice</li>
<li>½ &#8211; 3/4 cup (loosely packed)- chopped coriander leaves<br />
10  mint leaves chopped</li>
</ol>
<p><strong>For</strong> <strong>coating</strong>:</p>
<ol>
<li>1-2 Eggwhites<br />
Breadcrumbs-  As required<br />
Vegetable oil- To deep fry the spring rolls.</li>
</ol>
<p><strong>Pancake preparation:</strong></p>
<p>To make the batter, mix all the ingredients well in a large bowl using a  balloon whisk or blend them in a blender until everything is blended  without lumps. Heat a small frying pan onto medium heat; pour ½ a  ladle of batter to form circles of 5” diameter. Just cook the  pancake on one side ONLY and take them out.(The pancake will be cooked  on both sides this way).Place them in a plate rubbed with oil. Place a  heaped teaspoon of the masala on the uncooked side as shown in the  <a href="http://shabscuisine.blogspot.com/2009/08/spring-roll-and-tag.html">picture</a>. Place it in the top part from middle, an inch away from the  sides. Fold both sides to enclose the filling in and then roll it  completely to seal the filling in (refer my notes). When you fill one spring roll,  you can start making the next one.<br />
Dip the roll in lightly beaten  egg whites and then roll it in breadcrumbs until fully coated. I  normally use the spoon or fork for this as it is quite messy when done  with hand. Heat a frying pan filled halfway with oil. Fry these  rolls in the oil until golden and crisp.</p>
<p>Serve whilst warm with  ketchup, chilli sauce, sweet chilli sauce, chilli garlic sauce etc.</p>
<p><strong>Meat Masala preparation:</strong></p>
<p>In a sauce pan, add 2 tbsp oil and add minced chicken. Add 1 tsp pepper  powder,1/4 tsp turmeric powder,¼ tsp garam masala and enough salt. Cook  until the meat is tender and all water has dried up completely. (If  using Minced lamb or beef. add half a cup of water and cook until the  water is completely dries and meat is well cooked)<br />
Slice the onion  and chop them into even smaller size. Grate ginger,  garlic and Green chillies. In a large non-stick sauce  pan or frying pan add oil and set the heat to medium-high. Add the onion, grated ginger, garlic, green chillies and salt and sauté  until onion becomes just translucent i.e. they have become soft and  started turning pale. Don’t brown them. If you see any moisture in the  onions at this stage, just turn up the heat, and dry them out. Once the  water has completely dried up,add ½ tsp of pepper powder and ¼ tsp of  turmeric powder and sauté for few more seconds.</p>
<p>Add cooked minced  meat and lime juice to this; mix well and simmer for about 5- 10 minutes  on medium flame by covering with the lid. Add chopped coriander, mint  leaves (if adding) and rest of the garam masala to this and stir well  and cook for further couple of minutes until the leaves are wilted. Use  as a filling for any snacks.</p>
<p><strong>Shab&#8217;s notes: </strong></p>
<p>For slicing onions and chopping them you can use the food processor.<br />
You  can also add whole garlic cloves, ginger and chillies all together and  process in the processor until well crushed.</p>
<p>It is ideal to use large pans (I use 30 cm or 32  cm saucepans) and medium- high flame is very important thing to keep in  mind. Since there are quite lot of onions in the recipe, using a small  saucepan and low heat can tend to make the onions soaky and release so  much moisture in the masala that it will turn out like curry or sauce .  Keep an eye so that the mixture doesn’t stick to the pan as well.<br />
Another  important thing to note is that since you are adding salt to meat, add  salt to onions carefully. I always add salt along with onions because  they get cooked easily.Apart from using minced meat, u can also make the  same masala with chicken pieces cooked in the same way by adding little  water and then shredding it once it is completely cooked.</p>
<p><strong>My Notes: </strong></p>
<p>I used boneless chicken cubes for the filling. I cooked it first as said in the recipe and minced it later in food processor. I also used 1 tsp of Eastern meat masala. I added it along with turmeric &amp; pepper powder to the onion mixture. I didnt use lemon juice &amp; mint leaves. I used the extra filling for making stuffed buns. I froze the extra spring rolls. Defrost it before frying. I froze it for a month or so. I made a thick paste with plain flour (maida) &amp; water and used it to seal the sides of the pancake after filling them.

<p>Also I&#8217;ve been tagged by <a href="http://yum-world.blogspot.com/">Divz</a> ( I assume that she is referring to me &#8220;Maria&#8221; :) ) to write 25 random facts about me. Its first time am being tagged and am excited about it. Thanks a lot Divz for that :).</p>
<p>I will write the recipe first and then 25 random facts. Those of you who  are interested &amp; have time can read the me-me :)</p>
<p>Here is the recipe:</p>
<ol>
<li>Beef &#8211; 1/2 kg</li>
<li>Onion &#8211; 1 big, sliced finely</li>
<li>Small onion &#8211; 1/2 &#8211; 3/4 cup, sliced<br />
Chili powder &#8211; 1/2 tbsp<br />
Coriander powder &#8211; 1tbsp<br />
Turmeric powder &#8211; 1/2 tsp<br />
Ginger &amp; garlic &#8211; 1/2 &#8211; 1 tbsp, crushed<br />
Vinegar &#8211; 2 tsp</li>
<li>Aniseeds/fennel &#8211; 1/2 &#8211; 1 tsp<br />
Cinnamon &#8211; 1 inch piece<br />
Cloves &#8211; 4-5<br />
Star anis &#8211; 2</li>
<li>Garam Masala &#8211; 1/2 &#8211; 1 tsp (optional)</li>
<li>Bite size coconut pieces (thengakothu) &#8211; 1/4 &#8211; 1/2 cup</li>
<li>Coconut oil<br />
Salt<br />
Curry leaves</li>
</ol>
<p>Powder the number 4 ingredients and keep aside. Combine the powdered spices, number 3 ingredients, tiny coconut pieces, salt, curry leaves &amp; beef. Make sure that beef is marinated well with the spices. Pressure cook the marinated beef till it is done. I usually dont add water while cooking, but if you want you can add 2-3 tbsp of water. If there is any water left, after pressure cooking, cook till the water is dried.</p>
<p>Heat oil in a pan and saute the onions, till it becomes golden brown. Add the cooked beef &amp; curry leaves. If you want you can sprinkle garam masala at this stage. Mix well. Stir over a low flame, till it is roasted well.Serve with rice and <a href="http://www.mariasmenu.com/vegetarian/kachimoru-moru-kachiyathu">kachimoru</a> or chapathi, <a href="http://www.mariasmenu.com/vegetarian/motta-egg-puttu">puttu</a>, <a href="http://www.mariasmenu.com/favourites/palappam">appam</a> etc;</p>

<p>25 Random Facts About Me&#8230;</p>
<p>Now, we will go to the 25 random facts about me. Before you read, I would like to bail out on something. Am not good in writing, so if there are some mistakes, please bear with me :)</p>
<ol>
<li>If you put me on an extrovert-introvert scale, I will be slightly pointing towards the introvert one.</li>
<li>I don&#8217;t like the idea of a full time job. The thought of sitting in an office for a full day for n number of years drives me crazy. Luckily for me I had to do a full time job only for six months and then Jose came riding on a horse and rescued me ;).</li>
<li>I like to sing and dance but my talents in both equals the numerical value of zero, hhmmm. I even attended some music class but one day after listening to my soulful singing, my music sir suddenly became philosophical. He told me&#8221; Maria, God has blessed different people with different talents, I think God has blessed you so much with some other talent and that is dominating over your music talent”!! That was like shooting my future in music at point blank :( The only place I can sing freely is in church and I utilize that opportunity to the fullest (I do pity those people standing next to me). Knowing this my mom never stands next to me when we go for mass in Kerala, she makes sure that she is standing 10 feet away from me :). After marriage, I&#8217;ve a loyal listener, Jose :). I think he is just standing it because he doesn’t want to break the marriage vows of being with me in good and bad times ;)</li>
<li>I&#8217;ve an irrational fear of dogs and cats and for that matter almost any animal. Somehow I&#8217;ve got the talent of sensing a dog and cat within a radius of 1 km (may be that&#8217;s my dominating talent!). I refuse to take a step further if I see a dog and cat. I don&#8217;t hate them, but am too scared of them. This is something I really want to overcome, but I fail every time miserably :((. When I was in Bangalore, where the roads belong to the street dogs (thanks to Maneka Gandhi), I used to have nightmares daily of being bitten by a dog. In Bangalore I used to walk on roads like a Z category (security) person, surrounded by my friends. Once I was going for dinner with my friends and a dog started following us, though my friends were protecting me, I was scared to the core and started running and finally I got into an auto. The dog followed me and stood there barking. The driver asked me where I wanted to go, I said I just want to get rid of that dog, so he wanted me to get out of that auto immediately. On one side my friends are standing and asking me what’s happening, on the other side the dog is standing and barking, on the front the driver is shouting at me. On top of that, two of our classmates passed by, they were surprised to see me in auto alone at that time and they were like &#8220;hey Maria, where are you going now, meeting any boyfriends&#8221; I was like GOOOOOOOOOOD SAVE ME!!!!! My adventures with dogs and cats are never ending&#8230;</li>
<li>I am very much an impulsive buyer and a first class shopaholic. Retail therapy can do wonders for me :) I miss my shopping trips with my Amma. On all Saturday afternoons, after her office hours, we used to go window shopping. Really miss those days :((</li>
<li>I like reading, discussing and debating about politics, be it Kerala, India or International. I&#8217;ve a soft corner for Kerala politics because that&#8217;s almost like watching a pucca masala/commercial movie. I love discussing/debating politics with my Appa and even now I call him once in a while just for that :)</li>
<li>The first thing I want to do in the mornings is to read Malayala Manorama Newspaper with a cup of coffee/tea. That’s the habit I&#8217;ve from my primary school days :) I really missed that during my 2.5 years of stay in Banglore. If I dont read Manorama in the mornings, I feel something’s missing.</li>
<li>I&#8217;ve a very strong reflex. At times I scare people with my reflex :(. For example when am sitting in the car, and if I see a low-lying branch of a tree, I automatically duck. Jose has warned me to relax; otherwise I will be shifted to the back seat</li>
<li>I am very weak in Hindi. Am always confused with ka, ke, ki or ha, hein, hoom etc; It takes me 5-10 minutes to construct a simple sentence in Hindi :(.</li>
<li>Sports and me do not get along. But there is slight improvement recently, Jose has started teaching me swimming and table tennis, dont know when he too will become philosophical like my music teacher ;)</li>
<li>I miss being bugged by my bro. I think I&#8217;ve written before that he calls my blog internet cooking fraud :) and nowadays he is coaching his 3 year old son, in bugging me and I think he will overtake his dad pretty soon.</li>
<li>I had a strong aversion to computer. I went to 3,4 different places to learn computer and everywhere it started and ended with Charles Babbage being the father and binary being the language of computer. I didnt go beyond that stage, I was stuck in the Charles Babbage era of comp. I didnt even know how to chat 4 years ago!!! Now my days starts and ends with chatting and on top of all those things, I&#8217;ve a blog!!! All credit goes to Jose, thank you my dearest for having the patience to fast forward me from Charles Babbage era to Mac era :)</li>

<li>Am embarrassed to write this one, I dont know to ride a bicycle. I drive car but bicycle :((. My bro tried teaching me to ride two-wheeler, but that time I was more interested in showing off than learning. Whenever I was riding two wheeler, instead of looking straight I looked side ways to see whether people are seeing my riding capabilities and that made my bro crazy, so my two wheeler driving lessons came to an end :(</li>
<li> I like to live in a noisy place rather than a calm place. I can enjoy the serenity for 3-4 hours max after that the calmness scares me.</li>
<li>Cochin and Bombay are my all time fav places.</li>
<li>I find it really hard not to honk while driving :). My bro makes fun of me by saying &#8216;Maria will drive even f there is no brake and clutch, but if horn is not there, she will be in a fix ;) It was really difficult for me to not to honk in Bahrain. Jose had a hard time convincing me that am driving ok, even if am not honking :)</li>
<li>I love watching movies, especially romantic comedies. I can watch 3-4 movies a day ;)</li>
<li>I love rains and I really miss it living in Bahrain. These days we try to go to India during monsoon season to enjoy the rain :)</li>
<li>When I learnt driving initially, I was scared to drive on busy roads. But, I find a solution for that. Start driving when the roads are practically empty, gain confidence and then venture on to busy roads. You don’t have to wait till midnight or early mornings for empty roads. Just wait for hartal/bandh (strike) days ?. Kerala being the dream destination of hartal supporters, you are assured a minimum of 4-5 hartal days a month. In a way, am indebted to hartal for giving me the confidence to drive ;)</li>
<li>Am a hypochondriac of med-high standard. I used to get health magazines and ended up with diagnosing one disease per day kind of. It continued till Jose banned all health magazines in the house. But still I do the diagnosis with the help of google search n mayo clinic :)</li>
<li>I should write something about food right? after all I&#8217;ve a food blog. I love bakery food. I used to live on bakery food during my school days. Even now when I go to a bakery am like a &#8220;nilavathu azhichu vitta kozhi&#8221; :) Seeing my love for bakery items, my aunts used to say “ninne oru bakery karane kondu kettikkam” (we will get you married to a bakery owner). Secretly, I loved that idea. The thought of unlimited supply of meat puffs, laddoos, jilebis, jam rolls etc on a daily basis was too much to resist ;). Looks like that option is still there. Though Jose is an I banker now, it’s his childhood dream to start a bakery! So I guess we were destined to meet, a bakery obsessed girl getting married to a bakery owner ;)</li>

</p><p>Surprised by the heading?? These days the product life cycle is becoming very short. Within one month of releasing a new product you have its new version with advanced features. Relax friends, am not lecturing about Marketing am just trying to give you an intro about the new version of mixed fried rice I made. I should say my 2nd version of mixed fried rice has a different flavor and taste compared to the previous one. Its like having fried rice from two different restaurants :)</p>
<p>I think some people like a particular taste for fried rice, for example my 2 year old nephew. He prefers fried rice from a particular restaurant in Mumbai (where my bro &amp; family lives) and he has fried rice from other places only if he is tooooooo hungry and there are no other options. I sometimes wonder how he is so selective at this young age :) , talk about present day kids! Anyways am a person who doesn&#8217;t mind trying different styles/version/tastes of fried rice.</p>
<p>Usually when I make mixed fried rice, I feel like standing in the mix n match dress section of <a href="http://en.wikipedia.org/wiki/Shoppers%27_Stop">shopper&#8217;s stop</a> :) I dont have a fixed recipe for fried rice, I usually make it with the available ingredients. This time however I didn&#8217;tÂ  mix n match, I followed my Mother in Law&#8217;s recipe. Btw, this is one of her hit recipes.</p>

<p>Here is the recipe for version 2: <span id="more-477"></span></p>
<ol>
<li>Rice &#8211; 2 cups<br />
Butter &#8211; 2 tbsp<br />
Lemon Juice &#8211; 2-3 tbsp<br />
Hot Water &#8211; 3 3/4 cups<br />
Salt</li>
<li>Cooked chicken, prawns &amp; beef &#8211; 1/2 &#8211; 3/4 cup each</li>
<li>Scrambled eggs &#8211; 2</li>
<li>Carrot &#8211; 1, chopped<br />
Beans &#8211; 1/4 cup, chopped<br />
Onion &#8211; 1, chopped<br />
Capsicum &#8211; 1 small, cut into small cubes<br />
Celery &#8211; 1 tbsp, chopped</li>
<li>Garlic crushed &#8211; 1/2 tbsp<br />
Ginger &#8211; 1/2 tbsp</li>
<li>Soya sauce &#8211; 2 tbsp<br />
Green chili sauce &#8211; 2 tbsp</li>
<li>Chicken tastemaker &#8211; 2 cubes (optional)</li>
<li>Butter &#8211; 2 tbsp</li>
</ol>
<p>Wash the rice &amp; soak it in water for 25 mins. Drain the water completely. Heat 2 tbsp butter in a pan. Add rice &amp; fry it for 5 minutes or till it starts cracking. Add lemon juice &amp; salt &amp; water. Cook till the rice is done.Once the rice is cooked spread it on a tray and let it cool.</p>
<p>Heat 2 tbsp of butter in a pan. Add onion, ginger &amp; garlic. Once it becomes soft, add carrot, beans, capsicum &amp; celery. once the veggies are cooked add the cooked chicken, prawns &amp; beef. Add salt &amp; chicken cubes. Saute well. Add soya sauce &amp; green chili sauce. Combine well. Add rice &amp; scrambled eggs. Mix together everything. Cover &amp; cook for 3,4 minutes. Serve hot.</p>

<p><strong>Notes</strong>: The quantity of ingredients(the amount of non veg &amp; veggie ingredients) is a personal choice. You can vary it as per your taste.I used Basmati Rice. Chicken &amp; beef were cooked with salt &amp; pepper and prawns was cooked with salt &amp; a pinch of turmeric. If chicken cubes are added, be careful while adding salt. You can also use any refined oil instead of butter.
