After two sweet posts in a row, I’m sure you must be waiting to see something spicy cooking up here. Since I’m in no mood to be a spoilsport and disappoint you, spicy it is! I’m always on the lookout for some flavored rice recipes. The main reason for liking the flavored rice is you dont need too many curries to go with it unlike normal plain rice, so less cooking ;)
I usually get comments and mails from working mothers/wives asking for one pot dish/meal, which can be cooked easily. This is one such recipe. Since it’s flavor packed by itself, I think it’s better to have some light gravy/curry or if you ask me some raita would also do, along with some sweet & sour pickle like this lemon n dates.

Add finely sliced onion to heated oil. When it becomes golden brown, add minced ginger & garlic. Cook for a few mins and add the masala powders and cook for a few mins…

When oil starts appearing, add the lemon juice and salt. Mix well and add the cooked veggies…

- Cooked basmati rice – 3 cups
- Onion – 1 small, finely sliced
- Ginger and garlic – 1tsp each, minced
- Chilli powder -1/2-1 tsp
- Coriander powder – 1 tsp
- Turmeric powder – ½ tsp
- Garam masala – ½ tsp
- Meat masala – ½ tsp (refer notes)
- Lemon juice – 1 tbsp
- Cooked vegetables – 1 cup (I used carrot and beans)
- Coriander and mint leaves – 1 tbsp each, chopped
- Salt
- Ghee/oil – (I used sunflower oil)
- Heat ghee/oil in a deep bottom pan. Add finely sliced onions. When it turns golden brown, add minced ginger and garlic. Cook for a few mins. Add the masala powders and cook till the oil appears. Add lemon juice and salt and mix it. Add cooked veggies and mix. Add cooked rice and combine gently. Garnish with the chopped coriander and mint leaves.
- You can also garnish with fried onions and cashews. Serve with raita, pickle and pappad.
