Brinjal Manchurian

This is ideal for vegetarians who are looking out for a variety.

  1. Brinjal Manchurian1.gifbrinjal-manchurian1.gifBrinjal - Big 4 (Remove the skin & cut in finger shape)
  2. Garlic - 3 tablespoon chopped
    green chilli - 4 chopped
    Ginger - 2 tablespoon chopped
  3. Onion - 1 big chopped
    Capsicum - 1 chopped
    Spring onion - 4 tablespoon
  4. Soya sauce - 2 tablespoon
    Tomato sauce - 3 - 3 1/2 tablespoon
  5. Oil - for frying
  6. Sugar - 1 teaspoon
    salt - to taste

For Batter

  1. Cornflour - 8 tablespoon
  2. Maida - 8 tablespoon
  3. salt

Make a thick batter with cornflour, maida, salt & a little water. Add brinjal to this & Mix well. Fry it till it becomes golden brown. heat oil in a pan. Add garlic & saute for 2 minutes. Add ginger & green chilli. After 2 minutes add onion, capsicum & spring onion. When it becomes tender add the sauces & mix well. Add sugar & salt. Add 1/2 cup water & cover & cook. When the gravy becomes a sauce consistency add brinjal & mix well. Garnish with spring onion.
