I have a suggestion to improve this. Its always better to smear the veggies with salt (and turmeric powder, if required) and steam them before frying them for about 5-10 minutes. That way, the veggies loose very little of freshness, color, flavor, crispiness and nutritional value. You will get them medium cooked in steam in 5 minutes or so. Then, depending on personal preferences, they can be fried with whatever ingredients, consistency and depth, as desired. It takes less time too, steam is an extremely efficient cooking medium, trust me. Do let me know if you find this helpful. In fact, this can be applied to almost all kinds of &quot;malayali veg thoorans&quot; ! Please do not try cabbage and other similar light cooked thoorans in this fashion. Those are better lightly fried directly, without steaming.</description>
